At the heart of Aponi Bayosa is a simple story: a friendship built on a shared passion for the pure, authentic taste of Philippine coffee.
Our journey took us across the country, from misty highlands to sunlit plateaus, where farming communities welcomed us with their deep, generational love for the land and the beans it nurtures. Over cups of freshly brewed coffee, we discovered a shared belief — that the best coffee is an honest expression of its origin.
This respect for single-origin Philippine coffee inspired everything that followed. Aponi Bayosa is our way of honoring that connection by working with local farming families, sourcing the finest specialty beans, and ensuring our passion directly supports their craft and community.
For us, this is the true meaning of coffee: friendship, shared moments, and a commitment to protecting the rich and diverse flavors of Philippine coffee heritage.
At the heart of ApoNiBayosa is a simple story: a friendship forged by a shared passion for the pure, authentic taste of Philippine coffee.
Our journey began as we traveled across the Philippines, from the misty highlands to the sun-drenched plateaus. We were welcomed into farming communities, each with a deep, generational love for the land and the unique coffee beans it nurtures. In sharing cups of freshly brewed coffee with new friends, we discovered a common belief—that the best coffee is a true and honest expression of its origin.
This mutual respect and love for single-origin Philippine coffee beans inspired everything that followed. ApoNiBayosa is our way of honoring that connection. We work hand-in-hand with local farming families across the country's coffee regions, not just to source the finest specialty grade beans, but to ensure that our shared passion directly supports their craft and community.
For us, this is the true meaning of coffee. It’s about friendship, shared moments, and a commitment to protecting the rich and diverse flavors of the Philippine coffee heritage.
We are honored to share this passion with you.
We believe that ethically sourced Philippine coffee is a deep responsibility, which is why we are committed to working directly with the farming families.

Returning to Her Roots
For Fides, this journey is a homecoming. As an Ibaloi woman, the misty highlands of Benguet are more than just a landscape; they are her inheritance. While living abroad, she felt a pull to reconnect with her heritage, a longing to understand where she came from. It was in this search that she made a beautiful and profound discovery: her own great-grandmother was a coffee farmer. This connection was affirmed in a moment of pure wonder. During a traditional cañao ceremony, as she was welcomed back by her tribe, a large Mariposa butterfly gently landed on her arm and remained there, as if in quiet conversation.

The elders saw it as a clear sign—a blessing from her ancestors. They interpreted it as the spirits of the land and her forebears, giving their approval of her return and her path. It was a confirmation that she was exactly where she was meant to be.
Apo ni Bayosa is a way of honoring that heritage. The butterfly represents resilience, hope, and the belief that something delicate can also be powerful. It is a reminder that behind every bean is a story of endurance, family, and love for the land.

the force that brings it all home
If Fides is the heart of Aponi Bayosa, Stella is the hands. Upon hearing Fides' vision, she didn't just agree—she rolled up her sleeves. Stella is the friend who sees a need and immediately starts figuring out the "how." While Fides shares the story from afar, Stella is the one on the ground, managing the intricate dance of getting the coffee from the mountain farms to your doorstep.
Her dedication is deeply practical and profoundly compassionate. For Stella, the proof is in the doing. She believes in the sacred math of fairness—that the farmers must set their own price—and she works tirelessly to make that principle a reality. She is the steadfast engine of the operation, turning a beautiful idea into tangible change, one carefully packed bag at a time.
